Baked Apple
Preparation time less than 30 mins Cooking time less than 10 mins
Ingredients:
1 apple
6-8 Raspberries
55g/2oz goats' cheese, diced
A sprig of rosemary
110g/4oz caster sugar
30ml/1fl oz water
1 vanilla pod, seeds scraped out
fresh mint, to garnish

Method:
1. Preheat the oven to 220C/425F/Gas 7.
2. Cut the top off the apple and then hollow out the inside using a melon baller. Place on a non-stick baking tray.
3. Add the raspberries to the middle and then the goats' cheese. Add the rosemary and then bake in the oven for 6-8 minutes.
4. Meanwhile, heat the sugar and water in a small pan. Add the vanilla seeds and simmer gently to make a syrup.
5. Remove the apple from the oven and transfer to a serving plate. Pour the vanilla syrup over and serve garnished with the mint.
