Ice cream cake

Preparation time 30 mins to 1 hour Cooking time less than 10 mins

Ingredients:

1/2 madeira cake

a few mint chocolates

85ml/3fl oz double cream

2 scoops of ice cream

knob of butter

1 pear, cored and cut into slices

For the chocolate sauce:

12 Mint Chocolates

55ml/2fl oz milk

Method:

1. Crumble the cake and mint chocolates into a large bowl and mix together with the cream. Add the ice cream and mix together until combined.

2. Spoon the mixture into a dish lined with cling film and then place in the freezer for approximately half an hour to an hour, if time allows.

3. Meanwhile, to make the chocolate sauce, place the mint chocolates in a bowl over a pan of simmering water and allow to melt. Add the milk to the bowl, stirring to combine.

4. Heat a griddle pan and add the butter. Griddle the pear slices for 2-3 minutes on each side or until softened.

5. To serve, turn the ice cream cake out onto a serving dish, drizzle with chocolate sauce and serve the griddled pears alongside.
