Potato and Stilton Soup
Preparation time less than 30 mins Cooking time 10 to 30 mins
Ingredients:
handful of new potatoes, sliced
a few sage leaves
chicken stock cube
handful of flatleaf parsley, chopped
a few chives, chopped
110-140g/4-5oz stilton

Method:
1. Bring a medium-large pan 3/4 full of water to the boil.
2. Add the potatoes to the pan with the sage leaves and boil for 5-6 minutes.
3. Crumble the stock cube into the pan, reduce the heat and simmer for 8-10 minutes.
4. Stir in the fresh herbs and then crumble in the stilton. Heat for a further two minutes.
5. Transfer the soup to a food blender and blend until smooth.
6. Return to the pan and warm through for a few minutes.
7. Transfer to a soup bowl and serve at once.
