Purple Sprouting Broccoli, Bean and Pasta Soup
Preparation Time: 10 minutes
Cooking Time: 35 minutes
Serves: 4
Ingredients:
1 red onion, peeled and chopped
4 tbsp olive oil
6 garlic cloves, minced
4 tsp chopped herbs; Oregano, thyme, parsley
3 cups of cooked white beans with cooking liquor (2 x 150g cans of cannellini beans undrained)
400g purple srouting broccoli, chopped finely
1 litre of chicken or vegetable stock
100g pasta, broken spaghetti or tiny shells
salt and pepper
grated parmesan

Method:
1. Cook the onion in the olive oil until soft, add the garlic and cook for 2 minutes. Then add the herbs and broccoli. Cook over a moderate heat until the broccoli is soft.
2. Add the beans, liquour and stock and simmer for 15 minutes. Add the pasta and cook it in the soup until al dente.
3. Season well and serve with the grated parmesan.
